How may climate change impact the maple syrup industry? Our team of interdisciplinary researchers, ACERnet (Acer Climate and Socio-Ecological Research Network), has been working to understand the complex answers to this question for the past several years. In particular, we are interested in examining how climate impacts the timing of the maple tapping season as well as both the quality and quantity of sap collected during the tapping season.

Things You Can Do to Ensure the Quality of Your Maple Syrup

After producing maple syrup for over 40 years and teaching seminars on maple syrup production for close to 20, I have made or personally witnessed most of the common mistakes that lead to off flavors and poor syrup quality. In this article I will go over some, but certainly not all, of the factors that lead to poor syrup quality. The good news is that most of the factors can be controlled by producers with best practices, in turn meaning you control the quality of your syrup. The Map of Maple Off Flavors (linked above) identifies 5 primary areas where off flavors occur: Mother Nature, defoamer, processing, chemicals and others. I want to address each area in order of how they would occur from start of season to finish.

Understanding Buddy Off-flavour in Maple Syrup

Acquiring the ability to identify common off-flavours in maple syrup is important for producers. Detecting buddy off-flavour in fresh sap can be difficult, although much easier to taste in finished syrup. Buddy syrup can be described as an unpleasant chocolatey aroma and flavour having a lingering bad aftertaste. Buddy flavour in maple syrup is a food quality issue, not a food safety issue.

United States Standards for Grades of Maple Syrup

Voluntary U.S. grade standards are issued under the authority of the Agricultural Marketing Act of 1946, which provides for the development of official U.S. grades to designate different levels of quality. These grade standards are available for use by producers, suppliers, buyers, and consumers. As in the case of other standards for grades of fresh and processed fruits, vegetables, and specialty crops these standards are designed to facilitate orderly marketing by providing a convenient basis for buying and selling, for establishing quality control programs, and for determining loan values.

Vapor Compression Evaporation (V.C.E.) offers a method of capturing lost energy and improving the fuel consumption of an O.P.E. Most of the energy goes up in steam and this unit will recapture lost energy to reuse.
