Some have gone further, adding maple products like ice cream, maple cotton candy, and maple-coated popcorn or nuts. More adventurous sugarmakers have begun making additional items, like salad dressings, hot sauces, and dog biscuits.

Determining Shelf Life and Consumer Acceptability of Processed Maple Sap Beverages for Small Businesses

Consumer interest in local products and functional beverages has increased markedly in recent years. Several beverages composed primarily of maple sap are currently available in the marketplace. These products are sold at ambient temperature, and are considered shelf stable. Prior investigation has demonstrated the need for specialized processing equipment in order to achieve shelf stability of maple sap beverages. The current study investigated the feasibility of producing a refrigerated beverage without the use of commercial processing equipment for small businesses.

Check-Valve (CV) spouts and adapters incorporate a small, free-floating ball which is designed to reduce or prevent backflow of sap into the taphole during freezing, when leaks in the tubing system occurs, and when mechanical releasers dump and introduce air into the system. Several studies over nearly a decade have compared sap yields from CV adapters and spouts to various non-CV spouts and adapters.

High Brix Syrup Processing & First Two Seasons with Lapierre HyperBrix

Given our extensive research experience on RO processing and flavor, and the appearance of new RO technology that could concentrate to higher levels, a shift toward this new technology seemed appropriate. Therefore after investigating various options, we entered into a partnership with Lapierre Equipment to utilize the new HyperBrix RO system at UVM PMRC. This paper describes some aspects of our first two seasons of use of this equipment. Given the state of the industry, we define Òhigh brixÓ maple sap processing as RO machines capable of producing concentrate at 30¡Brix or higher.

Quality Control in the Sugarhouse: Knowing where things can go wrong, and making sure that they don’t.

The most helpful advice for producers concerned about damaging otherwise good syrup is the most basic; make sure to grade each batch carefully and don’t assume that just because everything went smoothly in the sugarhouse that the syrup doesn’t need to be checked. Others build their backyard operations into wholesale businesses that keep them busy year-round. Some enjoy selling directly to their customers. Does Color Matter? Spouts come in variety of hues. Does it affect yield?

In general, it is presumed that any effect of Òspout colorÓ on sap yield arises due to thermal warming of darker-colored spouts during sunny periods. Darker-colored spouts warm faster and the spout temperature can rise considerably above air temperature when hit by the sun compared to lighter-colored spouts. To assess the effect of Òspout colorÓ on sap yield, we conducted a multi-year study at the University of Vermont Proctor Maple Research Center in Underhill, Vermont. Twelve treatment plots were randomly assigned a different spout type, with one mainline and releaser for each plot.

The complex relationship between climate and sugar maple health: Climate change implications in Vermont for a key northern hardwood species

This study compared 141 ecologically relevant climate metrics to field assessments of sugar maple (Acer saccharum Marsh.) canopy condition across Vermont, USA from 1988 to 2012. After removing the influence of disturbance events during this time period to isolate the impact of climate, we identified five climate metrics that were significantly related to sugar maple crown condition. While three of these are monthly summary metrics commonly used in climate analyses (minimum April, August and October temperatures), two are novel metrics designed to capture extreme climate events (periods of unusual warmth in January and August). The proportion of climate-driven variability in canopy condition is comparable to the proportion accounted for by defoliating pests and other disturbance events.
